Salmon and Prawn Salad with Spiced Fyffes Banana Salsa

Banana Salsa:

½ red chilli, finely chopped

½ orange or yellow pepper, finely chopped

½ red onion, finely chopped

2 medium tomatoes, finely chopped

2 cloves garlic, crushed

1 large firm but ripe banana, chopped

75g/3oz mango, chopped

Juice and grated rind 1 orange

2tbsp fresh lime juice

1tbsp chopped chives and parsley

Salt and black pepper

Salad:

4" piece cucumber, peeled, halved and thickly sliced 

½ bag mixed salad leaves 

1 ripe avocado, peeled and diced

4tbsp olive oil

1-2tbsp balsamic vinegar

6oz/175g cooked salmon, skinned, boned and flaked 

4oz/110g prawns, shelled


Method

1.Mix the banana salsa ingredients together first, add seasoning to taste and set aside, stirring occasionally. Chill.

2.Prepare the salad by placing all the green ingredients into a large bowl and mix in the oil, vinegar and seasoning to taste. 

3.Top with the salmon and prawns and mix in gently. Serve with the chilled salsa.
