Fyffes Pineapple Upside Down Cake

Ingredients

½ cup of butter
1 cup of brown sugar
Fyffes Pineapple rings
½ cup of walnuts or pecans – chopped coarsely
1 cup of flour
½ teaspoon baking powder
¼ teaspoon salt
4 eggs
1 cup of sugar
Pineapple juice

Method

Cream butter: add sugar, beaten egg yolks. Sift together flour, baking powder, salt; add to first mixture alternately with water. Fold in stiffly beaten egg whites. While making cake batter, melt butter and brown sugar. When thick add cut pineapple. Pour batter over fruit and bake about 35 minutes in moderate oven. Remove the dish, turning upside down so that the fruit will be on top. Serve hot with hard sauce or whipped cream.

Grilled Fyffes Pineapple with Papaya Sauce

Ingredients

1 Fyffes Gold Pineapple
Melted butter (for greasing and brushing)
2 pieces of drained stem ginger in syrup
2 tbsp of Demerara sugar
1 pinch of cinnamon

For the sauce
1 ripe papaya (paw paw)
¾ cup apple juice

The sauce

Peel and seed the papaya and cut a few slices from it. Puree the remainder of the fruit with the apple juice. Press the puree though a sieve over a bowl and pour any remaining juice in from the baking tray. Serve the pineapple with the sauce around each plate and garnish with the sliced papaya.

Method

Peel the pineapple and cut it crossways into 6 slices – about 1in thick.
Line baking sheet with foil and grease with butter
Arrange the pineapple slices on the baking tray and brush with remaining butter then top with the ginger sticks, the sugar and the cinnamon. Drizzle remaining ginger stem syrup on top. Grill for 5 – 7 minutes.

Fruit shake

Ingredients

1 Medium banana
½ cup of quartered strawberries
½ cup of Fyffes Gold pineapple into chunks
¾ cup of orange juice
1 cup of ice

Method

Put all ingredients into blender, puree until very smooth and thick.
