Banana Melon Salad


  • Half a honeydew melon, deseeded and sliced
  • 2 bananas, peeled and sliced diagonally
  • 1 ripe peach, halved, stoned and sliced
  • 40g/11/2 oz blueberries
  • For the dressing
  • 4tbsp. coconut cream
  • 1 – 2 tsp. light soy sauce
  • I lime, finely grated rind and juice
  • Generous pinch chilli powder
  • A little sugar to taste           
  • To Garnish
  • A little fresh parsley, finely chopped


Preparation Time: 5 - 10 minutes

Serves: 4

A great refreshing way to start a meal.

  1. Mix together the four fruits and place onto 4 serving plates.
  2. In a bowl whisk up the salad dressing ingredients and season to taste. Pour over the fruits and serve garnished with a little finely chopped parsley

A great basic recipe that other fruits may be added like blueberries, strawberries etc
