Banana Melon Salad
Ingredients
- Half a honeydew melon, deseeded and sliced
- 2 bananas, peeled and sliced diagonally
- 1 ripe peach, halved, stoned and sliced
- 40g/11/2 oz blueberries
- For the dressing
- 4tbsp. coconut cream
- 1 – 2 tsp. light soy sauce
- I lime, finely grated rind and juice
- Generous pinch chilli powder
- A little sugar to taste
- To Garnish
- A little fresh parsley, finely chopped

Serves: 4
A great refreshing way to start a meal.
- Mix together the four fruits and place onto 4 serving plates.
- In a bowl whisk up the salad dressing ingredients and season to taste. Pour over the fruits and serve garnished with a little finely chopped parsley

A great basic recipe that other fruits may be added like blueberries, strawberries etc
