Pineapple Coleslaw
Ingredients
- 240 g Fresh Pineapple, diced into 1/4” cubes
- 1/2 Small Head Green Cabbage, shredded
- 2 Jalapenos, diced and seeds removed
- 110 g Shredded Carrot
- 1/2 bunch coriander, stems and leaves finely chopped
- Juice of 1 Lime
- 3 tbsp White Vinegar
- 1 tsp Salt
Method
- Chop and prep all of the ingredients.
- Combine in a large bowl, and mix well.
- Chill for at least 3 hours before serving.
