Pineapple Paleo Salad
Ingredients
- 435 g pineapple chunks (Keep the juice separate)
- ⅔ of a cucumber, chopped
- ½ small-medium white onion, thinly sliced
- 30 g fresh mint leaves
- 1 tbsp pineapple juice (reserved from the chopped pineapple)
- 1 tbsp fresh lime juice
- 2 tsp extra-virgin olive oil
- ¼-1/2 tsp crushed red pepper flakes (more or less to taste)
- ¼ tsp sea salt
Method
- Gently stir together all ingredients in a large bowl and serve.
