Banana Oat Breakfast Cookies
Ingredients
- 2 ripe bananas (about 1 cup mashed)
- 1 egg
- 1/2 cup peanut butter
- 1/2 cup maple syrup
- 2 cups Oats
- 1/3 cup chopped walnuts
- 1 tbsp seeds (sunflower & pumpkin)
- 1/2 cup raisins
- Handful flaked almonds
Method
- Mix all ingredients together except the flaked almonds
- Use an ice cream scoop to scoop the mixture onto a lined baking tray
- Flatten gently
- Sprinkle flaked almonds and press down gently
- Bake on 180° for about 10-12 mins or until golden
- TIP! It’s delicious to drizzle some melted white or milk chocolate on them for an extra treat or even add a few chocolate chips inside!
