Mofongo (Mashed Garlic Plantains)
This Caribbean favourite combines mashed plantains, garlic, and olive oil into a hearty, flavour-packed side dish that pairs beautifully with meat, fish, or vegetables.
Ingredients
- 3 green plantains, peeled and cut into thick slices
- 3 cloves garlic, minced
- 3 tbsp olive oil or butter
- Salt to taste
- Optional: crispy bacon bits or sautéed prawns for topping
Method
- Fry or boil the plantain slices until tender (about 10 minutes).
- In a bowl, mash with garlic, oil, and salt until chunky and well combined.
- Shape into small mounds or serve loosely mashed.
- Top with your choice of bacon, prawns, or sautéed onions.
